Vegan is a campaign encouraging people to try a vegan lifestyle for the month of January, which aims to raise awareness of the environmental, health and ethical benefits of a vegan diet. Health benefits of a vegetarian diet include a lower risk of heart disease, type 2 diabetes and some types of cancer. A vegetarian diet is also associated with a lower body mass index (BMI) and may help with weight loss.
Environmental benefits of a vegetarian diet include reducing greenhouse gas emissions and conserving water and other resources. Animal agriculture is a major contributor to climate change, and a shift toward a plant-based diet could help reduce these emissions. A vegan diet can also save water, as it takes less water to produce plant-based foods than animal-based foods.
Ethical benefits of a vegan diet include reducing animal suffering and promoting animal rights. “Growing environmental concerns around the consumption of meat, fish and dairy have encouraged an increasing number of people to adopt a completely plant-based diet. With more people attempting to reduce their consumption of meat and dairy, Veganery, also known as Vegan January, is totally on the rise and more doable than ever,” says Jasmine Bharucha, Founder, Katharose Foods.

Vegan Cumin Cheese Cake
material
- 1 cup dates
- 1 cup raw walnuts
- 1 ½ cups quick soaked cashews
- ⅔ cup full-fat coconut milk
- ⅓ cup coconut oil
- 1 large lemon
- ½ cup maple syrup
- 3 Tbsp Katharoos Vegan Cumin Cheese Spread
Way
- Put the dates in a food processor and blend until small pieces remain and it forms into a ball. Take it out and keep it aside.
- Next, add nuts and process into a meal. Then add the dates and mix until a loose dough is formed – it should hold together when you press a little between your fingers. If it’s too dry, add a few more dates through the spout while you process. If too wet, add more almond or walnut flour. Add a pinch of salt to taste.
- Lightly grease a standard, 12-slot muffin tin. To make it easier to remove the cheesecake, cut strips of parchment paper and place them in the slots. This makes it easy to remove.
- Next scoop 1 tablespoon into heap of crust and press down with your fingers. To pack it in, use a small glass or the back of a spoon to compact it and really press it down. Set in freezer to set.
- Put all the filling ingredients in a blender and blend until very smooth.
- Taste and adjust seasoning as needed. When adding the Katharoos Vegan Jeera Cheese Spread, add to a blender, and blend until well blended.
- Divide filling evenly among muffin tins. Tap a few times to release any air bubbles, then cover with plastic wrap and freeze until firm – about 4-6 hours
- Once set, remove them by tugging on the tabs or loosening them with a butter knife
- Optional: You can set them out for 10 minutes before serving to soften them.

Vegetarian Stuffed Tofu
material
Tikka Masala Marinade:-
- ½ cup vegan yogurt (or Greek yogurt)
- 1 tbsp besan (gram flour)
- 1 tbsp ginger garlic crushed
- ¼ tsp turmeric
- 1 tsp Kashmiri red chili powder
- ½ tsp cumin powder
- 1 tsp chaat masala
- ½ tsp garam masala (or tandoori masala)
- 1 tsp kasuri methi (dried fenugreek leaves)
- 1 tsp lemon juice (or dry mango powder)
- 1 tsp olive oil
- salt to taste
other ingredients
- 16 oz extra-firm tofu pressed 30 minutes, cut into 1″ cubes
- 1-2 medium capsicum cut into 1″ cubes
- 1 small red onion cut into 1″ cubes

Way:-
- Press the extra hard tofu with some heavy object for at least 30 minutes. This will remove excess moisture.
- Then cut the tofu into cubes.
- In a large bowl, add vegan curd, gram flour, ginger-garlic paste, turmeric powder, red chili powder, roasted cumin powder, chaat masala, garam masala, kasoori methi, lemon juice, salt and oil. Mix everything well.
- Using a melon baller, shape the tofu pieces into bowls.
- Stuff katharose peri peri cheese into carved tofu pieces.
- Then add tofu cubes, capsicum and onion to the marinade. Gently toss tofu and vegetables until well coated.
- Cover the bowl and refrigerate for at least 30 minutes or up to 24 hours
- Meanwhile, soak toothpicks/skewers, lightly spray or brush with oil and cook for a further 3-4 minutes.
- Transfer to a serving plate, squeeze a little lemon juice, sprinkle chaat masala, and serve Air Fryer Tofu Tikka immediately with mint chutney
Vegetarian Lasagna Recipe
material
- 16 lasagna sheets
- 1tbsp extra virgin olive oil
- 1 large onion and 4 cloves garlic (crushed and minced)
- 700 g Vegan Meatless Meat Keema
- 700 grams tomatoes and 170 grams tomato paste
- 2 teaspoons oregano (or basil)
- 1 tsp red chili flakes
- 3 cups vegetable stock
- salt and ground black pepper to taste
- 2 packets Katharos Vegan Mozzarella (sliced)
Way
- If using regular lasagna sheets, cook them in salted boiling water until al dente but not mushy.
- Make the meat sauce by heating the oil in a large saucepan. Add onion and garlic. Sauté until they are soft, about five minutes. Put the minced meat in the “meat” and fry for a couple of minutes. Add tomato paste and mix.
- Put the tomatoes in a bowl and break them by mashing them with your fingers. Pour into saucepan with 3 cups vegetable stock.
- Stir well, bring to a boil, and add oregano, red pepper flakes, salt, and ground black pepper to taste. Stir and let the sauce cook for about 15 minutes or until it turns bright red. Switch off the flame and check the seasoning. Cancel.
- Preheat oven to 400 degrees Fahrenheit.
- Assemble lasagna by spraying a 12 X 9-inch lasagna pan with cooking spray or oil. Ladle a little sauce in the pan and spread it.
- Add four sheets of pasta to the bottom of the pan.
- Layer one-fourth of the meat sauce on top of the lasagna sheets.
- Layer on a quarter of the vegan mozzarella.
- Repeat until you have made three layers of meat sauce and cheese. On top of the fourth and final layer, pour the remaining meat sauce and mozzarella layer.
- Cover tightly with aluminum foil, place the lasagna pan on a rimmed baking sheet and bake in the oven for 30 minutes. After 30 minutes, remove the aluminum foil and bake for another 30 minutes until bubbly and hot.
- Let the lasagna harden for at least 15 minutes, then cut and serve.
