Making Marinated Tofu Tikka

  • Cut the tofu pieces into roughly 1-inch squares
  • To Marinate – In a separate bowl add tandoori tikka masala, ginger garlic paste and oil, mix well and make a paste of smooth consistency.
  • Add the marination to coat the tofu well and refrigerate for 2 hours.
  • Preheat the oven to 200o C.
  • Remove the marinated tofu from the refrigerator and place them on metal and wooden skewers.
  • Take a baking tray and grease its surface well. Place the skewer on the tray and bake it for 10 to 15 minutes until a charred crust forms.
  • Remove the beautifully charred tofu and let it cool.

Making Tikka Masala Gravy

  • Put tomatoes, ginger, garlic, cashews and whole spices in a large pot, cover with water and place the pot over medium heat.
  • Bring the pot to a boil and cook till the cashews are completely soft. When the cashews become completely soft, remove the pot from the flame and let it cool. The whole process will take about an hour.
  • Once the mixture cools down, grind it to a smooth puree. You can add water as required to make a smooth puree. Take care of the whole spices and make sure they are thoroughly mixed; Otherwise, chewing them can be unpleasant.

Making Tofu Tikka Masala

  • Heat oil in a pot. Add finely chopped onions and cook till the onions are completely caramelized.
  • Add ginger garlic paste to the caramelized onions and stir for two minutes till the paste is cooked.
  • After the paste is cooked, add the tandoori tikka masala, stir for 1-2 minutes and smell the delicious aroma of the spices.
  • Add the ground gravy to the cooked paste on top and let it cook on low flame for 10 to 15 minutes till oil starts leaving the sauce.
  • If the gravy has thickened, you can add water to the sauce and cook till the water boils. The best way to find out if your dressing is cooked is to taste it. If you can still taste the raw spices, let them simmer for no longer than 5 minutes.
  • Once the gravy is well cooked, add marinated tofu to the sauce and serve the delicious tofu tikka masala with delicious butter naan and puffed white basmati rice.

Crispy Cauliflower Wings

Prep Time: 30 Minutes

Cook Time: 10 Minutes

material:

  • 1 head of cauliflower (cut into large florets)
  • 1 cup rice flour
  • 1/2 cup cornstarch
  • 1/2 cup 00 Pizza Dough (Buy from Amazon if not available locally)
  • 1 cup water (add more if needed)
  • salt and pepper to taste)
  • oil for frying
  • Bum Bay Masala (add according to taste – words of advice – the more the better)
  • Korean BBQ Sauce

preparation

  • Boil salted water in a vessel, put cauliflower flowers in it and cook in water for 5 to 6 minutes. Make sure it doesn’t get mushy.
  • Once the cauliflower is cooked, take it out in a tray and keep it in the fridge until it cools down completely. This ensures that it doesn’t cook further, or it may turn mushy.
  • For Batter – In a bowl mix rice flour, corn starch, 00″ flour, and salt and pepper with water to make a batter. Be sure to remove all lumps. The consistency of the batter should be thick.
  • Dip the cauliflower in the batter and then in the panko crumbs for extra crunch.
  • Heat the oil and fry the cauliflower on medium flame till it becomes golden and crisp.

Vegetarian Ham and Bean Stew

  • 2 tablespoons redoro olive oil
  • 4 cloves garlic (minced)
  • 1 onion (finely chopped)
  • 1 bay leaf
  • 1/2 cup celery (finely chopped)
  • 1 teaspoon mixed herbs
  • 1 large potato (cut into dice)
  • 2 cans of kidney beans (covered)
  • 2 packets of vegetarian meat
  • 1 can of diced tomatoes
  • 1 Tbsp Vegetarian Chicken Broth Powder (Buy from Amazon if not available locally)
  • 3 cups water
  • 1 tbsp fresh coriander (finely chopped)

  • Heat olive oil in a large pot.
  • Once the oil is hot, add minced garlic, finely chopped onion and bay leaves and cook for 2 minutes until fragrant.
  • Add ajwain to enhance the taste. After adding the celery, add the mixed herbs and cook the herbs with the ingredients for two minutes.
  • Add chopped potatoes, strained kidney beans and vegetarian meat. Stir well so that all the potatoes, beans and meat are completely covered with the aromatic mixture.
  • Next, add the peeled tomatoes along with their juice, chicken bouillon powder and water and mix well. Let the stew simmer on low heat for 10 to 12 minutes.
