1. Matar Kulcha
Matar Kulcha is one of the most popular street food in North India, especially in India Delhi, Punjab and Uttar Pradesh. This delicious combination of (unstuffed) kulchas with peas is a spicy dish made using white peas (also known as vatana). To make this dish, cook soaked white peas or peas in a pressure cooker with water, ghee, salt and ginger. After cooking, add spices like black pepper, cardamom, coriander powder and dry mango powder. Plain kulchas are also very easy to make. Mix all purpose flour, sugar, salt, baking soda, curd and oil to make a dough. You can also add prepared yeast to it. Knead the dough with the help of lukewarm water and then keep the dough covered with a wet cloth. Leave it on for about 2 hours. Afterwards, knead some more and then break into smaller balls. Flatten with the help of a rolling pin and sprinkle sesame seeds and coriander over it. Bake the kulchas on a non stick tawa or in the oven till they turn golden brown in color from both the sides. 2. Amritsari Kulcha with Pindi Chole
A classic Punjabi breakfast and famous street food, Amritsari Kulcha with Pindi Chole is a match made in heaven. Both parts of this combination pack a delicious punch. While nothing can stop you from enjoying Chole with plain Kulcha, don’t put off having Amritsari Kulcha before you taste it. If you can’t make Amritsari Kulcha on time, try cooking Masala Chana with your plain Kulcha. It is similar to chickpeas, but here the gravy consists of potatoes. To make Masala Chana, first boil the gram with some spices. Another delicious option is to make a butter based gravy with your kulchas. First of all, you have to shallow fry the paneer pieces in salt and chilli powder. Next prepare a thick gravy with butter, onions, tomatoes and spices. Add paneer to the gravy and mix well.
