But some of us can get tired of eating the same type of dish. If you want to take your paneer parathas to the next level, we recommend making Palak Paneer lifafas. Wondering what they are? As you may know, lifafa means an envelope and while making this particular dish, you have to fold the dough as if you are folding paper to make an envelope. Don’t worry, it’s very easy! And the end result is so delicious, you’ll be tempted to make these envelopes again and again.

How to make Palak Paneer Lifafa | Quick and easy recipe of Paneer Lifafa Paratha
What you need to make Palak Paneer Envelopes:
you can make Paratha with whole wheat flour or maida, although this recipe uses the former. The stuffing consists of paneer (cottage cheese), palak (spinach), onions, chillies, basic spices and a little cheese. The last stuffing is optional, but adding it helps bind the stuffing and makes the envelope more unique. lastly, you will need about 2 teaspoons of cornflour to make a paste to seal the edges.

How to prepare palak paneer envelope:
Prepare a dough by mixing flour, salt and ghee. Add water and knead it well. Cover the dough and keep it for 30 minutes. Meanwhile, start making stuffing. In a hot pan with oil, add cumin seeds and then chopped onions and chillies. When the onion becomes soft, add chopped spinach and fry it. mix well. Cook till all the moisture in the spinach mixture evaporates. allow to cool.
In a large bowl mix the grated paneer with garam masala, red chili powder and other spices. Add A kind of cheeseAdd salt to taste and mix all the ingredients well. Make sure the mixture is completely dry. After the dough has rested enough, knead it a little more and then divide it into smaller parts. Shape each into small balls and roll them to flatten. Lightly roast this plain paratha (from both the sides) on a griddle with ghee/oil/butter.
Paneer Lifafa is a different way to enjoy your stuffed paratha
Place a half cooked paratha on a flat surface and put a little of the palak paneer mixture in the centre. Bring the two opposite edges together on top of this. Use cornflour mixed with water as a sealing paste and fold the remaining two edges to form an envelope-like pattern. Roast the envelopes till they turn golden brown from both the sides. Serve hot with chutney or enjoy plain.
