Kanji, also known as kanji, is not only a comfort food but also helps in nourishing the gut. In a conversation with The Indian Express, dietician Garima Goyal sheds light on why kanji is beneficial for health.

According to the dietician, kanji should be consumed by the sick as it not only cures stomach related problems but also nourishes the intestines. It is also easy to digest as it is cooked with a lot of water and has a mushy consistency.

Explaining the amount of water in the dish, the expert said that it usually has a ratio of 10:1 water to rice grains. It can also be in the ratio of 7:1 if one wants it to be thick. For babies, the dish can also be made using 13 parts water. “Kanji is basically 80-90 per cent water. Rice grains absorb a lot of water when cooked for a long time. So it is very refreshing and hydrating to consume on sick days,” she said.

Apart from water, kanji can also be made using chicken stock or bone broth, which not only makes it easily digestible but also rich in proteins, vitamins and minerals.

Since the water content is high, the carbohydrates in the dish are low. Apart from this, Kanji also fills and reduces hunger.

According to the expert, adding ginger and chopped scallions to the dish makes it a good home remedy for cold and flu symptoms.
How to make Kanji?
The first step is to remove excess starch from the rice by washing it thoroughly with water. This also removes any kind of impurity or dirt in the rice grains. Choose the ratio of water based on your preference of consistency. Bring the mixture to a boil. Keep stirring it in between so that the rice does not burn from below. Once you get the consistency right, season it with salt. (Note: Protein can be added to items, including chicken, fish and ground pork.)
