- First of all wash and boil the potatoes. After that, cut the potatoes in such a way that the slices fall directly into the bowl of salted water. PS This is done to prevent the chips from browning.
- Now boil water in a pan on high flame. Add salt and mix well. In batches, add potato slices. Cover and cook for 4-5 minutes or till they are half cooked. Repeat with remaining potato slices.
- Filter the potato pieces and spread them on a clean muslin cloth. If you have time, you can even dry them in the sun for 7-8 hours.
- Deep fry them when they are completely dry! In a small bowl, mix red chili powder, black salt and a little chaat masala. Mix well and sprinkle over potato chips.
