Here’s how you can prepare the perfect Himachali Jhol in less than an hour.
1. Show off your chopping skills. Finely chop thandai and coriander leaves.
2. Mix buttermilk or curd well. Make sure there are no lumps. If you are using curd instead of buttermilk, do not forget to add water to make it a water-like consistency.
3. Add all the spices-turmeric, cumin, red chili powder and salt to the gram flour and mix well.
4. Now add the liquid to the dry ingredients and make a thin batter. Avoid lump formation in it and make it as watery as possible.
5. Once you are done. Place the pan on medium heat and stir continuously until the mixture turns a bright yellow colour.
6. Switch off the gas and keep stirring for half a minute.
7. Garnish the piping hot jhol with coriander leaves and it is ready to be served.

What sides can be added with Jhol?
Jhol is served with hot rice during weddings or even when prepared at home. Since it has a watery consistency, the local people like to eat it with rice. Simply mixing it with rice and eating it with your hands in the traditional way is very nutritious. Like buttermilk, it is also often consumed as a side drink by the locals. Drink a large glass of Jhol with your meal to aid digestion. However, if you prefer to have chapatis with your meal, you can dip some puffed bread in your jhol and enjoy it.
