Tips for making Malai Kulfi at home:

  1. Always use iron or aluminum pan for making Kulfi.
  2. After the milk starts boiling, cook it on a low flame while stirring continuously.
  3. Remove the frozen cream on the sides of the pan and mix it in the milk.
  4. Boil the milk till it reduces to half of the amount of milk you started with.
  5. Some people use corn flour to thicken the kulfi mixture, but you can also add extra cream and ground almonds for a nicer texture.
  6. Allow the mixture to cool completely before pouring it into the kulfi moulds.
  7. It takes 7 to 8 hours for the Kulfi to set completely, so do not open the refrigerator in between.
  8. To prevent the kulfi mixture from forming ice crystals, after pouring the kulfi mixture into a mold or bowl, cover it with silver foil. If you are freezing it in a bowl, mix it after 2-3 hours and cover it again.

To make Malai Kulfi at home, boil 2 liters of milk in a pan. Boil the milk for about 20 minutes till it reduces to half. Then add half a cup of sugar, cream and almond powder and cook while stirring. When the mixture thickens, turn off the gas and let it cool completely. Pour the mixture into a kulfi mold or bowl and let it set for 7-8 hours or overnight.
