1. Honey

If the recipe calls for a teaspoon of vanilla extract, add a teaspoon of honey instead. Since honey has a sweeter taste as opposed to vanilla essence, you may want to reduce the amount of sugar in the recipe.

The zest of any citrus fruit, lemon, lime or orange, is also a good replacement for vanilla extract. The delicious zest will balance out the taste of the cake without making it sour. A pinch of enthusiasm will do the trick.
