for potato masala
Oil – 3 tbsp
Asafoetida – tsp
Cumin – 1 tsp
Mustard – 1 tsp
Ginger chopped – 1 tsp
Green chili chopped – 1
Turmeric – tsp
Curry leaves – a sprig
Potatoes (boiled and mashed) – 1½ cups
Green coriander chopped – a handful
salt
to make sandwiches
Jumbo Bread Slices – 4
Butter – 2 tbsp
Onion balls – few
Tomato balls – few
Capsicum seeds – few
salt to taste
Chaat masala – a generous pinch
grated cheese – a handful

How to prepare Mumbai Masala Toastie?
1) Heat some oil in a pan. Now add cumin seeds, mustard seeds, finely chopped ginger, green chilies, curry leaves and turmeric, followed by boiled potatoes and green coriander. Mix all these well.
2) Take a slice of bread and put some green chutney (if you have it) or butter on it. Spread the potato mixture you have prepared all around. Garnish it with onion slices, tomato and capsicum slices as well. Now put a pinch of salt over it and add chaat masala. Cover it with another slice of bread.

3) Toast the sandwich as usual. Garnish it with green chutney and grated paneer.
