What defines Madras curry?

The term Madras refers to the use of a special type of curry powder, commonly available in Chennai. It is a hot and spicy curry prepared with a thick red colored sauce. You will also get a slight sourness in this dish due to the tamarind and fenugreek added to it. In this recipe, the meat is not marinated; Instead, it is cooked with roasted spices.

What is the difference between Curry and Madras Curry?

The main difference between the recipes is the level of heat. Adding curry powder to Madras curry makes the dish spicier than usual. This further changes the color of the dish and makes it darker.

Mutton Madras Curry Recipe: What makes Mutton Madras Curry?

First of all, heat oil in a pan and fry it by adding coriander, black pepper, fennel and red chili. Transfer to a bowl. In the same pan, roast dry coconut and grind everything into a fine paste. Make another set of masala paste with green chillies, garlic and ginger in the paste.

Heat some more oil in a pan, add cinnamon and onions and fry till they turn golden brown. Add mutton and fry till it turns brown. Add green chili paste and red chili paste to it and cook it well. Add tomatoes and cook till soft.
