Winter is here and hence the time has come to consume green vegetables of winter. During the season, our vegetable basket includes fresh leafy vegetables – palak, chaulai, bathua etc to name a few. Another such popular winter green is mustard (or mustard leaves). In Punjab, winter is synonymous with mustard greens. This dish mixed with mustard greens, bathua leaves, ghee and some spices gives the mantra of enjoyment. Sarson ka saag, when combined with makki ki roti, ghee and jaggery, makes for a wholesome meal on cold winter days. Though the dish finds its roots in a particular region, today the popularity has broken down barriers, making it desirable to all. And the best part is that you can easily make the dish at home.

Keeping this in mind, we’ve got some quick tips you can follow to make the perfect Punjabi-style Sarson Ka Saag. These tips have been shared by food vlogger Parul on her YouTube channel ‘Cook with Parul’. Along with it, she also shared a detailed video demonstrating the recipe. let’s take a look.

Here are 3 quick tips to make the perfect sarson da saag:

Tip 1. Take a bunch of baby mustard leaves. The softer the stem, the easier it is to cook dishes.

Tip 2. Always add corn flour to the recipe to bring out the flavor and texture.

Tip 3. Prepare the tempering separately and add to the greens (in the last step) to enhance the taste.

Here’s The Recipe Of Punjabi Sarson Da Saag:

First of all finely chop mustard leaves, spinach, fenugreek leaves and bathua. Cook these vegetables in a pressure cooker with green chillies, salt and water. After cooking, mash the mixed greens and add maize flour to it and mix well.

Now heat ghee in a pan and fry onions in it. Add red chili, ginger, garlic, green chili and fry it. Then add tomatoes and cook everything well. Also add coriander powder and salt in this step. Add greens to it and mix well.

Prepare tempering by adding fried asafoetida, dry red chili, green chili, ginger in ghee. Pour the tempering into the greens and turn off the gas. Close the lid and keep it like this for some time.

Finally, the saag is ready to eat.
