First you have to peel the potatoes and cut them like french fry. Soak it in water for some time and then keep it on the kitchen towel. Dry the potatoes well, remove all the moisture if you want the potatoes to be crunchy. In a mixing bowl, add chopped potatoes and season them with red pepper flakes, soy sauce, sugar, oregano and vinegar. Do not add salt or water to the potatoes, adding salt removes the moisture of the potatoes, which makes the potatoes soft. Next, add cornflour, all purpose flour and ajinomoto. Mix it well till the chopped potatoes are coated. Heat oil in a pan and deep fry the potatoes till they turn golden. Crispy potatoes are ready!
