How to make Chilli Garlic Rumali Roti | Recipe by Chef Saransh Goila

Component:

3 tbsp oil
75 grams garlic
4 Kashmiri red chilies
1 green chili
2 tbsp salt
50g butter, melted
500 grams flour
10 grams salt
10 g sugar
25 grams mashed banana
Leftover Chili Garlic Paste
50 ml milk
250 ml water

Method:

1. In a saucepan, add oil and fry the garlic cloves till they caramelise.
2. Crush the cloves and put them in a blender. Add the soaked Kashmiri red chillies, green chillies, 2 tbsp salt and about 20 ml water (you can use the leftover water to soak the chillies). Blend to make a smooth chili garlic paste.
3. Take melted butter in a separate bowl and add about 2 tsp of chili paste to it.
4. Mix all purpose flour, salt, sugar, mashed banana, milk, water and remaining water to make roti dough chili garlic paste. Knead well to make a soft dough. Cover the dough and keep it aside for about 30 minutes.
5. To heat an aluminum pan, turn it upside down on the stove. coat the hot pan with salt water
6. Roll the dough into very thin rotis. Try flipping them to spread them and get a napkin-like consistency.
7. Place the roti on a hot pan and cook on high heat. will make less heat Bread Strong, so take care. As soon as the roti starts cooking, fold it.
8. Take it out in a plate and apply chilli garlic butter prepared earlier. serve immediately.
