We at TOI realize that travel is much more than just sightseeing and cannot be limited to selfies at heritage sites. We appreciate the discerning traveler’s need to delve deeper into a destination, experience it almost as a local resident and understand its nuances. And keeping in mind the aspirations of the new age travellers, Times Passion Trails strives to bring these nuances to the fore with precision.
As a globally acclaimed tourist destination, Rajasthan is celebrated for its architectural heritage, its folk music and dance, its ethnic wear, etc. It is known for being the largest hot desert in the subcontinent, with a million accounts of history. , But coming from this unique combination of history and geography is one aspect of the culture that is truly special – its cuisine.
The food of the state has been deeply influenced by the spirit of innovation. In the past, hunting expeditions of warriors gave rise to a whole range of dishes using ingredients that were long lasting. Lentils and beans are commonly used; Milk, buttermilk and yogurt replaced water as basic ingredients in cooking. Oil and red chillies help in keeping the food safe. Each region and each city of this great state has its own distinctive cuisine.
Describing Rajasthani cuisine, Gayatri Rathore, Principal Secretary, Department of Tourism, said, “Rajasthani cuisine is a wonderful array of colourful, spicy and unique dishes. From street food to royal kitchen, the sumptuous variety has excellent digestive properties, from soothing and spicy to pungent and mouthwatering. ,
The participants of the Times Rajasthan Cuisine Trail will begin their journey in Jaipur on 31st August. After an orientation session in the afternoon, they’ll sample the city’s street food—but it’s only a trailer. The real show begins in the evening with a formal opening, followed by dinner. The journey will start the next day, with Mandawa as the first stop. A delectable lunch will be accompanied by a visit to a painted mansion, featuring the area.
Overnight stay and dinner will be followed by breakfast the next morning in Bikaner, the city’s most visited outlet known for its sweets along with Kachoris and Mirchi Vada. The journey from Bikaner to Jodhpur will take participants via Deshnok – home to the legendary Karni Mata Temple and lunch pit-stop at Khimsar. Dinner in the Blue City of Jodhpur will take place at one of its wonderful resorts, and participants will experience the non-vegetarian cuisine of the Marwar region. Local specialties will continue to incorporate them until the next day with dishes such as Gulab Jamun ki Sabzi and Chakki ki Sabzi, impossible to leave without a second helping.
Udaipur’s Lake City will be the last stop on the trail, with experiences here including a visit to the hilltop Monsoon Palace in Sajjangarh and a traditional Rajasthan thali meal. A truly fitting climax for a cuisine path, which ends on September 5th!
